From the Winemaker
The fruit was de-stemmed and cooled to a fermenter where it was left to cold soak. The fruit was then inoculated and fermented at 28 degrees with gentle pumpovers during fermentation.
Once the primary ferment was complete, the wine was left on skins for 25 days and pressed off to the tank. A small portion was racked to the barrel with the balance remaining in the tank to retain freshness and vibrancy. Filtered and minor fining prior to bottling.
