Winemaking Process
100% hand-picked, all the fruit was de-stemmed and crushed directly into a concrete fermenter. Three barriques worth of juice was bled off after 30 hours, then naturally fermented and left to sit quietly (in the same neutral barriques they started their life out in) for six months before a light filtration and bottling.

Adelina's small batch, super-savoury Rosato is blend of Dolcetto and Barbera taken from the Bowe-Lees-Loveys Vineyard at Woodside.
